Grilled Sweet Potatoes

It may be gloomy and windy outside, but it’s Summertime in our house! I love cooking seasonal dishes and when May finally rolls around, we are so ready for Summer meals, especially when I can create an incredibly healthy side dish recipe of only 4 ingredients for my hubby to grill for us with our steak or chicken! Nathan bought a grill last week and we have already put it to excellent use. I love the smell of the grill and even charred bits of blackness on our food. (Haha, not that he burns everything! I’m talking about the teensy little charred edges!)

Tonight we had a super simple and delicious meal and were pleased to discover a new favorite side: grilled sweet potatoes. This last minute idea was a winner for sure. We’ll be enjoying these all summer long!


2 sweet potatoes, peeled and sliced into 1/2 inch thick pieces
2-3 Tablespoons coconut oil, melted (I use cold-pressed so it has a light coconut flavor, but you can use expeller-pressed as well)
2 teaspoons Allspice
1 teaspoon ground Ginger


Place sweet potato slices in a large bowl. Drizzle melted coconut oil over slices, sprinkle spices and stir well until sweet potatoes are coated.

Place sweet potatoes on a hot grill and grill for 10-15 minutes on each side.

These sweet potatoes taste fantastic, but they are also loaded with nutrients. Sweet potatoes are full of Vitamins A and B6, beta carotene, potassium, fiber, and antioxidant and anti-inflammatory agents, among other things. It has been advised by medical researchers to include some “good” fats with every sweet potato dish in order for your body to benefit as much as possible from the beta carotene. I used coconut oil for our “good” fat, but olive oil would work nicely, as well.

Coconut oil is excellent for our bodies in so many ways; it is antiviral, antibacterial, anti-fungal, it helps with digestion, helps correct the root problems of diabetes and level out glucose levels, it supports the healing of tissues, protects against cancer, boosts energy, assists with proper thyroid function, etc. Coconut oil has been used for centuries in traditional medicine and now modern medicine is confirming the amazing benefits of coconut and coconut oil. It’s incredible to me that one thing could be good for such a plethora of health issues!
