Zucchini and Feta

Growing up, my mom made this dish for just the two of us (my dad and brother hate feta), so this is a decadent comfort food of sorts to me! It’s the simplest side to make for your entire family if they like the flavor of feta or just yourself, if you want to halve the recipe. In my home, I’m the only one who eats it, but I make the full recipe and enjoy the leftovers with several lunches or dinners.

Don’t be afraid to switch out the feta for goat cheese and add some seasonings and spices! I love this zucchini with just the three ingredients, but sometimes I like to sprinkle on some garlic or chipotle powder to change it up. Sometimes I use a larger 13×9 baking dish, but today I used my 8″ square dish. It’s a very forgiving recipe, so don’t feel the need to use exact amounts. You don’t have to stir it, either! Just throw things in according to the recipe and bake. It’s that easy. :)

Zucchini and Feta

Zucchini and Feta Printable

Ingredients:

6-8 zucchini, diced

4 tablespoons cold butter, cubed

1/2 cup feta cheese, crumbled

Instructions:

  • Preheat oven to 400˚. Throw your diced zucchini into a baking dish. Place butter cubes evenly on top. Sprinkle feta on top of that.
  • Bake in oven 20 minutes.
  • Switch oven setting to Broil on High until feta has browned well on top, about 2 more minutes. (Your feta will have browned slightly before broiling, but the broiling step MAKES this dish! Don’t skip it.)

Serve:

This side dish goes well with almost anything, so don’t be afraid to serve it with roasted chicken or something more decadent, such as lamb chops or steak, and sauteed peppers or a nice, fresh salad. If you’re following the THM meal plan, this dish is an “S”. Enjoy!
